A delicious soft and fluffy homemade cake, made with fresh apples and flavoured with cinnamon

It’s that time of year where I just want proper home-cooked comfort food recipes and this Apple & Cinnamon Cake is just that!

I’ve made it every weekend for the past 4 weeks and it’s the best thing to have on a Sunday afternoon when you are chilling at home.

Ingredients for Apple & Cinnamon Cake

The ingredients are quite basic and hopefully you should have most of them at home already. Full quantities are listed out in the recipe card below.

The dry ingredients are plain flour, sugar, baking powder, baking soda and cinnamon. You then need two large apples. Pink Lady apples are my favourite for this cake.

The wet ingredients are oil, yogurt, eggs and vanilla.

Then for the icing drizzle you will need icing sugar, cinnamon and water.

How To Make Apple & Cinnamon Cake

This cake is really easy to make. Everything is mixed by hand so you don’t need an electric whisk. Here are the step by step photos:

  1. Step 1: Combine the dry ingredients in a bowl and mix with a spoon.

  1. Step 2: Peel and chop the apples into smallish bite sized pieces and add to the bowl.

  1. Step 3: Mix the wet ingredients together in a jug.

  1. Step 4: Then add the wet ingredients to the bowl and mix again.

Cooking & Cooling

Transfer the mixture into a lined baking dish. I used an 8×8 inch dish. Then bake in the oven for 30 minutes.

Once cooked, remove the cake from the tin by lifting out the parchment paper. Transfer to a wire rack to cool for 10-15 minutes.

In the meantime make up the cinnamon icing by mixing together the icing sugar, cinnamon and water in a small bowl.

If your kids are not big fans of cinnamon you can skip this step. Or alternatively just make a plain icing for the top.

Drizzle the icing over the top, then cut into 9 squares.

Storage

This cake will keep in an airtight tin for up to 3 days. If you prefer to eat it warm (my preference!) then microwave for 15-20 seconds.

The slices can also be frozen and defrosted at room temperature in a couple of hours.

Description

A delicious soft and fluffy homemade cake, made with fresh apples and flavoured with cinnamon


Ingredients

  • 220g plain flour
  • 120g sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 2 large pink lady apples
  • 125ml oil
  • 130g plain yogurt
  • 2 medium eggs
  • 1 tsp vanilla

For the icing:

  • 2 tbsp icing sugar
  • ½ tsp cinnamon
  • ¾ tsp water

Instructions

  1. Preheat the oven to 170c fan and line an 8×8 inch square dish with parchment paper.
  2. In a large bowl mix together the plain flour, sugar, baking powder, baking soda and cinnamon with a spoon.
  3. Peel the apples and chop into small bite sized pieces, then add to the bowl.
  4. In a jug whisk together the oil, yogurt, eggs and vanilla and pour this into the bowl.
  5. Mix the ingredients together just enough so that they are well combined.
  6. Transfer into the lined dish and bake in the oven for 30 minutes.
  7. Remove the cake from the dish by lifting out the parchment paper and place on a cooling rack for about 10-15 minutes.
  8. In a small bowl mix together the icing sugar, cinnamon and water. When the cake has cooled a little, drizzle the icing over the top.
  9. Cut into 9 squares.

Notes

Leftover cake can be kept in an airtight tin for up to 3 days. If you prefer to eat it warm, reheat it the microwave for 15-20 seconds.

    Could you use grated apple if your kids don’t like seeing chunks?
