Baked Boursin Tomato Pasta

A super simple pasta dinner of tomatoes and Boursin cheese baked in the oven. Minimal effort but maximum taste!

Baked Boursin Tomato Pasta served in a pretty white bowl and garnish with a few small leaves of bazil.

If you’re bored of cooking up the same old pasta dishes then you need to give this Baked Boursin Tomato Pasta a try.

It’s so simple to make, the ingredients for the sauce are roasted in the oven then blitzed and mixed with cooked pasta. Perfect for a hands-off dinner!

Start with cherry tomatoes, olive oil and a little salt and pepper mixed together in an oven dish.

Add in a whole block of Boursin cheese along with some fresh basil leaves and bake for 25 minutes.

Whilst that is baking, cook some pasta on the hob.

When the pasta is cooked but before you drain it, remove a little of the pasta water and set it aside.

It’s then time to blend the sauce up, adding a little of the pasta water until it gets a really nice thick sauce consistency.

You can either blitz the sauce directly in the dish with a hand blender or transfer it to a stand blender.

Add in the cooked pasta and give it a good mix.

Then it’s ready to serve!

You can serve it as it is or add some cooked veggies or a salad to the side.

Description

Ingredients

  • 500g cherry tomatoes
  • ½ tbsp oil
  • salt and pepper
  • 150g Boursin cheese
  • handful of fresh basil
  • 350g dried pasta

Instructions

  1. Preheat the oven to 200c fan.
  2. Add the whole cherry tomatoes to an oven dish along with the olive oil and a little salt and pepper and mix well.
  3. Add the Boursin cheese to the middle of the dish and top with fresh basil.
  4. Bake in the oven for 25 minutes.
  5. In the meantime cook the pasta on the hob according to the package instructions.
  6. When the pasta is cooked but before you drain it, remove a little of the pasta water and set it aside.
  7. Remove the dish from the oven and blend the sauce until smooth. You can either blend it directly in the dish with a hand blender or transfer to a stand blender.
  8. Add a little of the pasta water to get the sauce to a smooth consistency.
  9. Add in the drained pasta and mix well.

Notes

This pasta is best eaten immediately after cooking although leftovers can be kept in the fridge for up to 2 days and reheated in the microwave.

    Thank you! I made this for my family – including my fussy son and his comment was “This is the nicest pasta I have ever had! I could eat this everyday!” (To start with, when I was trying to get him to help to make it, his comment had been: “It’s got tomatoes in it! I won’t like it!”). We couldn’t find boursoin so just used a local herby cream cheese that we didn’t bake – just stirred in at the end. Worked well. We’re trying the chicken curry tonight and broccoli pesto pasta on Thursday so hoping for success again.
