Do you vary your dairy? Bit of a weird question I know, but when St Helen’s Farm got in touch recently to see if I would like to try out some of their goats dairy products it really made me think about the kind of milk I give my family and why.

My children eat dairy products – they have cows milk, cheese and yogurts and I try to mix it up with nut milk and soya yogurts too.

But I have to admit that I never thought about goats dairy until now. 

What Goat Dairy Products are Available?

When St Helen’s Farm sent me some products to try out I was really surprised by the range of dairy products they have.

I have heard some good things about goats milk before and I love a bit of goats cheese myself, but I was surprised to find products such as butter, yogurts and even a cheese spread!

We tried out these products for a couple of weeks and it really was quite easy to integrate goats dairy into our diet.

We often think of goats cheese having a very strong and distinctive taste but the St Helen’s Farm products are all quite mild with a very subtle flavour.

There were no complaints from the kids when I swapped their usual cows milk for goats milk in their morning weetabix and they really enjoyed the yogurts, especially the honey flavoured version.

I really loved the cheese, rather than being soft like traditional goats cheese, this one is a hard cheese, almost like cheddar and was perfect for sandwiches or grated on top of pizzas or pasta.

The butter really surprised me too as it still had that creamy taste of traditional cows butter and it was perfect for spreading on toast or melting down to make pasta sauces.

Similarly, the spreadable cheese was a bit of a revelation. My favourite way to use it has been to mix it with spaghetti for a really quick and simply sauce.

Again, it has a very light and subtle flavour, mild enough for the whole family to enjoy.

Overall I was really surprised by how much we all enjoyed the goats dairy products and also just how easy it was to make simple switches from our usual cows milk alternatives.

Health Benefits

There are lots of health benefits associated with goats milk, including less allergenic proteins and less lactose than cow’s milk. You can read lots more about the different health benefits over on the St Helen’s Farm website.

These muffins are perfect to pop into lunchboxes or to be taken out and about for a delicious savoury snack.

My kids hate broccoli but because it breaks down so small when the muffins are cooked, they barely realised it was there.

The goats milk and cheese gives the muffins are really lovely subtle flavour without being overpowering. A big thumbs up from my family for these!

Broccoli & Goats Cheese Muffins – St Helen’s Farm

Description

Delicious and mild Broccoli & Goats Cheese Muffins, perfect for kids’ lunchboxes or to take out and about as a snack!


Ingredients

  • 175g / 6oz cooked broccoli
  • 150g / 1 cup plain flour
  • ½ tsp baking powder
  • 100ml / ½ cup St Helen’s Farm Goats Milk
  • 2 eggs
  • 75g / 1 cup grated St Helen’s Farm Mature Goats Cheese
  • 1 tsp mixed dried herbs
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 350c.
  2. Chop the cooked broccoli into small pieces.
  3. In a large bowl mix the flour and baking powder together. Add in the milk and eggs and stir well. Add the cheese, herbs and salt and pepper and mix until just combined.
  4. Line a muffin tray with 10 silicone cases and divide the mixture between them.
  5. Bake in the oven for 25 minutes until cooked through and the tops are golden brown.
  6. Allow to cool for 10-15 minutes before serving.
  7. The muffins will keep in the fridge for up to 3 days or can be frozen too.
