Cheese & Chive Chickpea Dip

A creamy and cheesy dip made with chickpea and packed full of protein! A great way to get kids to eat their veggies!

Last week I was staring at a can of chickpeas in my kitchen feeling completely uninspired.

I was trying to think of a recipe to get the kids to eat the chickpeas that wouldn’t get thrown back at me!

The last few times I put them in rice or a pasta dish they picked them out so I knew it would have to be more inconspicuous than that! 

Then I remembered that I had a tub of cottage cheese in the fridge that needed to be eaten and so I the idea came to me to make a cheesy chickpea dip that I could serve to the kids with some crackers and veggies for tea. Perfect!

The dip was so easy to make!

I added the chickpeas and the cottage cheese to the food processor with some grated cheddar cheese and blitzed it all for a couple of minutes.

I added a little milk to thin the consistency out and then finished it off with some seasoning and some chopped fresh chives.

The dip was a hit and I’ve already made it again twice since!

It’s definitely my new favourite go-to recipe that also happens to be super nutritious.

Chickpeas are a really great source of protein, fibre and iron and are a fantastic addition to any family’s diet.

Description

A creamy and cheesy dip made with chickpea and packed full of protein! A great way to get kids to eat their veggies!


Ingredients

  • 200g / 1.25 cups cooked chickpeas
  • 200g / 1 cup cottage cheese
  • 75g / 1 cup grated mature cheddar cheese
  • 1 tbsp milk
  • 2 tbsp chopped fresh chives
  • salt and pepper to taste

Instructions

  1. Add the chickpeas, cottage cheese and grated cheese to a food processor and blitz until smooth. A
  2. If the consistency seems a little too thick add the milk and blitz again.
  3. Stir in the chopped chives and then season with salt and pepper.
  4. Serve immediately or store in an air tight container in the fridge for up to 3 days.

    Easy, quick, and inexpensive. I haven’t tried this with my kids yet, but I found it a bit bland. However this means that my kids will probably love it.
