If you’re looking for a delicious high protein lunch to make at home then you have to try my Cheesy Leek Omelette. Using just five simple ingredients you can this tasty and healthy meal.

The recipe uses a whole leek which you may think is a lot but they cook down quite a bit and makes the whole dish really filling too.

step by step photos showing how to make the omelette

The first step is to cook the leeks in a little butter. Then add eggs, milk and seasoning and top with grated cheese.

Cook the omelette for a few minutes before finishing it under the grill.

With the ingredients I’ve used I’ve worked this out at 360 calories which, considering it is so filling, really is not a lot. I ate it just as it is, with a little lettuce on top but you could add some bread or a full side salad too.

Great omelet, but 1 leek ended up being way too much. Recipe could use a more specific measurement of the amount of leek needed.
