A super simple but delicious dinner recipe for kids. Creamy Basil Pesto Spaghetti. Nut free and ready in just 10 minutes!

Most evenings mid week are pretty manic in my house. Between school pick up, work, activities and play dates I’m often desperately scrambling together dinner at 6pm before the kids get too tired to even eat.

But I have a new favourite recipe that I have been making a lot recently and it’s perfect for days when I need to get a meal on the table fast.

Made with just four simple ingredients, this Creamy Basil Pesto sauce is so easy to whip up in the food processor and requires no cooking at all. My kids can be a bit funny when it comes to pesto.

I think it can be a bit oily and strong for them at times and I often find myself mixing it with cream cheese. So I thought why not just make a version with no oil and no nuts and they love it!

Description

A super simple but delicious dinner recipe for kids. Creamy Basil Pesto Spaghetti. Nut free and ready in just 10 minutes!


Ingredients

  • 200g / 7 oz spaghetti
  • 2 large handfuls of fresh basil (can use less if your kid don’t like basil)
  • 200g / 7 oz cream cheese
  • 50g / ½ cup grated parmesan
  • a dash of milk

Instructions

  1. Put the spaghetti in a pot with boiling water and cook as per the package instructions.
  2. Put the basil, cream cheese and parmesan into a food processor. Add a splash of milk and blitz until smooth. Add a little more milk if you prefer the consistency to be a bit thinner.
  3. Drain the pasta and mix in with the basil pesto sauce.
  4. Serve immediately.

      Best Serve immediately, But maybe you could transport it in a hot food flask, that way it will stay warm for some time.
