Crispy Chicken Burgers

Description

The most delicious homemade crispy chicken burgers. Made with a cornflake coating for extra crunch and oven baked to keep them super healthy.


Ingredients

  • 2 large chicken breasts
  • 40g plain flour
  • 2 medium eggs
  • 100g cornflakes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • salt and pepper
  • 2 tbsp oil

Instructions

  1. Preheat the oven to 200c.
  2. Place the chicken breasts between two pieces of foil and bash with a rolling pin. The aim is to flatten the chicken breasts a little so that they have an even thickness throughout.
  3. Cut the chicken breasts in half so that you have four pieces of chicken in total.
  4. Add the flour to a bowl.
  5. Crack the eggs into a second bowl and whisk with a fork.
  6. In a third bowl crush the cornflakes with your hand. Add the seasoning and oil and mix well.
  7. Take one piece of chicken and coat it in the flour. Dip into the egg then place in the bowl with the cornflakes. 
  8. Once the chicken is coated on both sides with the cornflake mixture, place onto a baking tray.
  9. Repeat with the remaining chicken pieces.
  10. Bake the chicken burgers for 30 minutes until they are golden and crispy.
  11. Serve immediately with burger buns and any other burger toppings that you like.
