Elf Spaghetti Pancakes

Buddy The Elf Breakfast Spaghetti but let’s make it actually edible! The kids will love this twist for a fun Christmas breakfast.

Buddy the elf sitting next to a Christmas themed red plate, full of Elf spaghetti. Garnished with Greek yogurt and berries.

If you’ve seen the movie Elf you’ll know that infamous scene where Buddy eats a plate of spaghetti for breakfast topped with lots of sweets, marshmallows, sprinkles and syrup.

Kids might love the idea of it but let’s face it, it’s not exactly edible!

So I tried to make my own version. Instead of pasta I made spaghetti pancakes, topped with greek yogurt and berries. A lot more appropriate for breakfast!

Ingredients being added into a glass measuring jug. The jug is sitting on scales.

Start with a basic pancake mixture of milk, egg and flour. Mix together in a jug until smooth.

Grease a large frying pan with a little butter or oil and then pour the pancake mixture in, zig zagging across the pan.

Go back and fill in any gaps with a small drop of the mixture. This will help to get those long spaghetti-like strings.

Pancake mix being poured into a frying pan.

Cook for 1-2 minutes, then flip and cook for another minute.

Don’t worry if your spaghetti pancakes break up when you flip them.

Repeat with the rest of the mixture and then pile them all up on a plate.

Top with greek yogurt and berries or another other toppings that your kids like.
