A super easy festive Rocky Road recipe made with white chocolate, cranberries and shortbread. A delicious decadent dessert that’s perfect for Christmas!

White Chocolate Rocky Road

Rocky Road is one of the easiest desserts to make. It requires no cooking or baking and is a great recipe to get the kids helping with.

It keeps in an airtight container or in the fridge for up to a week so is perfect to have on hand for when guests pop in over the festive period (if you can resist eating it all unlike me that is!).

It also makes a really lovely edible gift; simply package it up in some cellophane wrap and tie it with a ribbon.

Loved it! Just wanted to say I learned a lot. I melted my premium white chocolate over a double boiler and it seized (very hard to stir). I had never melted white chocolate before. I did research AFTER the fact and found out it has an extremely low melting point (think warm, not hot, water). Also I was a bit annoyed that you didn’t mention chopping up the cherries or cutting up the marshmallows. I had to do a print screen and zoom in to see that you did, in fact, cut them up. I found the freeze dried raspberries on Amazon and blended them to make powder. Also it was rather gnarly to try to figure out grams to cups but I just kind of winged it. I did not give up and the product came out rather well all things considered. My next batch will be much better.
