Freeze Ahead Roast Potatoes

The best, most crispy and crunchy roast potatoes all prepped ahead of time, partially cooked and popped into the freezer ready to be roasted straight from frozen. The best way to get ahead with your Christmas recipes this year.

Get Ahead Freezable Roast Potatoes

Christmas Day cooking can be so stressful. Getting all the components of a Christmas Day prepped and made in just a few hours can be really tricky indeed.

So this year I want to show you how you can get ahead of the more time consuming parts of the meal in advance with my Fuss Free Christmas!

Today it’s all about the roast potatoes. Delicious roasties that are crispy and crunchy on the outside but soft and fluffy in the middle. The ultimate side dish for Christmas Day!

What are the best potatoes to use for roast potatoes

Personally I like to use Maris Piper potatoes. They make the crispiest coating on the potatoes whilst still staying fluffy inside.

How many roast potatoes should I cook per person

I allow 250g of potatoes per person when making roast potatoes. This will allow for some people having a little more, some eating less and also a balance of adults and children.

Can you freeze roast potatoes

Yes you absolutely can! By peeling, chopping and parboiling the potatoes you are getting all the hard work done in advance. They can then be frozen and kept in the freezer for several weeks and cooked straight from frozen on Christmas Day. Here’s my recipe:

Peel the potatoes and then and chop into two or three, keeping the sizes as even as possible. Add the potatoes to a saucepan and cover with boiling water. Bring to the boil and simmer for 7 minutes.

Drain the potatoes well and leave them to cool for a few minutes in the colander

Once the steam has disappeared shake the potatoes in the colander to bash the sides up a bit. This will help to make an extra crispy crust on the outside.

Transfer the potatoes onto a tray and leave to cool.

Pop the tray into the freezer for an hour or two so that they start to become frozen on the outside.

Transfer them into two freezer bags and store in the freezer for the next few weeks.

To cook on the day, you can cook direct from frozen. Add the oil to a roasting pan and heat in the oven for a few minutes.

Add the potatoes and toss in the oil until they are fully coated. Cook at 180c for 30 minutes then 200c for another 30-45 minutes depending on the size of the roasties.

You can drizzle a little more oil over the top whilst cooking but the key to even crisp potatoes that don’t stick is not to turn them!

    Could you air fry these from frozen instead of putting them in the oven ? just wondered as I never seem to have enough room in my oven on Christmas day so it would really help.

      Hi Dianne,

      This isn’t something we have tried yet, but cant really see any reason why they wouldn’t work in your air fryer. Maybe worth a test run before the big day. Hope this helps.

    I made these tonight, from previously frozen, and they were so amazing!! I used Russets and Avocado oil for cooking. Super crispy outside, and a fluffy mashed potato center. Thanks for a great recipe. Everyone loved them.
