Frozen Veggie Packs for Fussy Eaters

If you struggle to get veggies into your picky eaters then try these Frozen Veggie Packs. Six different vegetables blitzed in the food processor and then frozen, ready to add to lots of different meals.

Getting veggies into fussy eaters can be hard work and I’m always trying to find new ways to up my children’s nutritional intake.

I’ve made lots of hidden veggie recipes in the past but they generally take quite a bit of time as you need to cook the veggies in a sauce then blend it all up.

So I decided to try a different method whereby I blitz a bunch of veggies raw then keep them in the freezer to add to meals when I need to get dinner on the table fast.

I used carrots, celery, courgette, red pepper, broccoli and cauliflower.

I blitzed the carrots and celery up first, just to make some room in the food processor as all the veggies won’t fit in together.

Then added the courgette, red pepper, broccoli and cauliflower.

I blitzed it again and also stirred the mixture with a spoon just to make sure everything was evenly broken up.

This is the consistency that you are looking for. Small grain-like pieces of veggies. Be careful not to over-blitz it or the veggies will turn mushy.

I then transferred the veggies into a large freezer bag.

Or you can pop them into individual containers or ice cube trays too.

Store in the freezer and when ready to use simply break off chunks of the mixture and add to meals like spaghetti bolognese, chilli and curries.

If you want to completely hide the veggies then you can make a quick pasta sauce with tinned tomatoes/passata, some herbs for taste and then add in the frozen veggies. Blitz to make the sauce completely smooth and mix with pasta.

Description

Ingredients

  • 3 medium carrots
  • 3 celery sticks
  • 1 medium courgette
  • 1 red pepper
  • 100g broccoli
  • 150g cauliflower

Instructions

  1. Wash the veggies and peel the carrots.
  2. Cut the carrots and celery into big chunks and add to a food processor.
  3. Blitz for a few seconds to break them down.
  4. Chop the courgette, red pepper, broccoli and cauliflower into chunks and add them to the food processor.
  5. Blitz again for another few seconds.
  6. Remove the lid and stir the veggies so that they all get evenly broken down and then blitz again.
  7. Be careful not to over-blitz as the veggies will start to go mushy. You want a very small grainy texture.
  8. Transfer to one large freezer bag or individual pots or food trays and freeze.
  9. When ready to use, simply break off a chunk and add to meals like spaghetti bolognese, curries and chilli.
  10. You can also make a simple pasta sauce by cooking the frozen veggies in tinned tomatoes, seasoned with herbs and then blitz until completely smooth.

Notes

These veggie packs will keep in the freezer for up to 2 month.

    I love this idea! I actually do this with my garlic and EVOO for easy use. My “child” (husband) hates vegetables and I’m always trying to find ways to hide them in food. This will make it a lot easier 🙂

    I keep seeing this recipe popping up all over social media, often thought of giving it a go as its such a great idea!

    problem being my daughter is so mega fussy to can find the smallest piece of veg in any meal. I always make such a effort to try and hide veg, but never seem to win her over.

      Maybe just make up a batch of this and pop it in the freezer so that you always have it to hand.

      start by adding very small amounts to a sauce or a even a curry, then just keep increasing the amount as she starts getting used to it. Hopefully one day you will win,just keep doing what your doing.

    Made a batch of this, at first my 6 year old turned her nose up, but stuck with it and now find myself adding some to a lot of her meals, and she none the wiser and seems to enjoy every mouthful. I will now be trying more of your hidden veggie recipes. Thank you for the great ideas.
