Gingerbread Oat Bars

Delicious festive Oat Bars with Biscoff and gingerbread spices. The perfect breakfast this Christmas!

Gingerbread oats cakes served in a dark blue oven dish, topped with small gingerbread men for decoration.

With Christmas round the corner you may want to inject a little festive flavouring into your family’s food and these Gingerbread Oat Bars are perfect.

The gingerbread flavour is very subtle, so not too overwhelming for kids.

They will keep in the fridge for a few days or can be frozen too. Ideal to whip out and reheat on busy weekday mornings.

Gingerbread oats cakes divided into eight identical pieces and topped with a small gingerbread biscuit decoration.

They’re so easy to make. Everything gets mixed up in the same dish that it’s cooked in which means minimal mess and washing up!

The first step is to peel a banana and mash it straight into an oven dish.

Add oats, milk and Biscoff spread. This gives the bars a delicious biscuit-y flavour that works so well with the gingerbread spices.

Add ground cinnamon, ginger and nutmeg and mix well.

Bake in the oven for 25 minutes.

Once cooked, allow them to cool for 5 minutes before cutting into 8 bars.

The toppings aren’t essential but they do add a little fun to these bars.

Mix some icing sugar and water together and spread that on the back of 8 mini gingerbread men.

Press one into the top of each bar.

Ingredient Substitutions

Banana – The banana can be substituted for apple sauce. The weight of a medium peeled banana is about 120g so use that amount of apple sauce instead.

Milk – Non dairy milk will work just fine

Biscoff – If you don’t want to use biscoff then Nutella or a nut butter will taste really good too.

Ingredients

  • 1 banana
  • 100g oats
  • 200ml milk
  • 70g Biscoff spread
  • ¼ tsp ground cinnamon
  • ¼ tsp ground ginger
  • ⅛ tsp ground nutmeg
  • 1 tbsp icing sugar
  • 8 mini gingerbread men

Instructions

  1. Preheat the oven to 180c fan.
  2. Add the banana to an oven dish and mash with a fork.
  3. Add the oats, milk, Biscoff and gingerbread spices and mix well.
  4. Bake in the oven for 25 minutes.
  5. Allow to cool for 5 minutes before cutting into 8 squares.
  6. Mix the icing sugar with a couple of drops of water.
  7. Add a little icing to the back of each gingerbread man and press into the top of the oat bars.

Notes

Leftovers can be stored in the fridge for up to 3 days. Reheat in the microwave. These bars can also be frozen. Defrost in the fridge overnight before reheating.

If you are keeping these in the fridge or freezer it’s best not to add the gingerbread men to the top just yet as they will go a little soggy.
