Christmas Fudge

CHRISTMAS FOOD

With just a month to go I think it’s now safe for me to start talking about CHRISTMAS and if you’re hoping to indulge in some healthy festive treats then today’s recipe is perfect for you!

Christmas time for us is always synonymous with food and LOTS of it!

So I wanted to come up with a recipe that was slightly healthier to balance out all the other lovely Christmas food that I know we will be enjoying!

EASY CHRISTMAS FUDGE

We usually think of Christmas fudge as being quite processed and full of sugar, but it is possible to make a very healthy alternative using just two basic ingredients!

My easy but delicious fudge recipe is perfect if you have a sweet tooth but wanted something a little bit healthier than your traditional fudge recipe.

There’s also no need for complicated kitchen equipment like a sugar or candy thermometer which I know a lot of people won’t have in their kitchen!

The best bit is that you only need two ingredients for this recipe AND it involves minimal prep so it really is the easiest fudge recipe you will ever make!

HOW TO SERVE CHRISTMAS FUDGE

This delicious fudge is the perfect holiday treat to have at home when you fancy a sweet treat, or if you are having a holiday party it’s sure to bring some holiday cheer to your Christmas spread!

Stuck for a last-minute gift? Parcel up a batch of this healthy fudge in some pretty Christmas wax paper and it makes simple but beautiful homemade gifts!

FUDGE TOPPINGS

Toppings for this fudge are optional and I’ve kept mine fairly simple with just some red and green sprinkles, but depending on how healthy you want your fudge to be, the possibilities are pretty much endless!

STORAGE INSTRUCTIONS

This fudge will keep covered in an airtight container in the fridge for up to five days.

If you try making my easy fudge recipe, please do leave a comment below and share your pictures with me on Facebook, Instagram or Twitter.  I always love to see your creations!

And wishing you all a very Merry Christmas!

Ingredients

  • 3 cups coconut flakes
  • 1 medium banana
  • 2 ounces of sprinkles (optional)

Instructions

  1. Place the shredded coconut in a high speed blender and blitz until it reaches a butter consistency. If you are having difficulty getting it to blend try adding a small dash of coconut milk or melted coconut oil to get it moving.
  2. Add the banana and blitz again until combined.
  3. Spoon the mixture into a small dish lined with parchment paper. Top with sprinkles if desired and refrigerate for 1 to 2 hours or until the fudge has hardened.
  4. Serve immediately or store in the fridge for up to 5 days in an airtight container.

My little girl and I tried these over the weekend to see if it might be something we could make as little gifts for her school friends and we were so pleased how they turned out. They’ll make such a lovely gift. Thanks for the recipe.
