
Mini Carrot Banana Bread! Perfect to pop into kids’ packed lunches or a tasty afternoon snack at home. They taste just like carrot cake!

If you are a regular to my website you know I’ve been making lots of these Mini Banana Breads recently. I have a Mini Chocolate Chip Banana Bread recipes and a Mini Chocolate Courgette Banana Bread version too.
I’ve had such amazing feedback on these recipes but several of you have mentioned that your child’s school has a zero chocolate policy for lunchboxes.

No problem… here’s a completely chocolate free version that kids can bring to school. Or just have as a tasty afternoon snack when they get home.
The recipe is so easy to make. Just chuck all the ingredients into a bowl and mix with a spoon.

Spray an individual brownie tin with spray oil or rub with a little butter to grease it well.
Then divide the mixture between the 12 holes.

This is the Individual Brownie Tin which I am using.
If you don’t have an individual brownie tin then a muffin tin works perfectly fine.

Bake for 20 minutes and then leave the mini banana breads to cool for a few minutes in the tin.
This will make it much easier to remove them.

Pack into lunchboxes for a healthier snack that’s much lower in sugar than store bought muffins or cake.
Or serve up with some chopped fruit and veg for a yummy and balanced afternoon snack.

STORING & FREEZING
They will keep in an airtight container for up to 3 days.
You can also freeze them. They will defrost quickly in the just a couple of hours so you can pop them straight into lunchboxes from the freezer and they will be ready to enjoy by lunchtime.

Description
Mini individual carrot cake banana breads, perfect to pop into kids’ packed lunches or a tasty afternoon snack at home
Ingredients
- 1 banana, mashed
- 1 medium egg
- 50g melted butter
- 150ml milk
- 2 tbsp honey
- 140g self raising flour
- ⅛tsp ground cinnamon
- 1 medium carrot (approx 125g), grated
- spray oil for greasing
Instructions
- Preheat the oven to 180c fan.
- Add all the ingredients except for the spray oil to a large bowl and mix well with a spoon.
- Grease a 12 hole brownie tin or muffin tin with spray oil.
- Divide the cake mixture between the 12 holes.
- Bake in the oven for 20 minutes.
- Allow to cool in the tin for a few minutes before removing.
Notes
Store in the fridge for up to 3 days.
These mini banana breads can also be frozen. Defrost at room temperature in a couple of hours.
