These mini egg bites are a great alternative to sandwiches or anything bread based in lunchboxes if your kids are not a fan.
Made with just four simple ingredients, they are brilliant to batch cook and have in the fridge or freezer.

Start by greasing a mini muffin tray like this one with some spray oil.
Add in chopped ham and grated cheese.

Whisk the eggs in a small jug and pour into the muffin tray holes.
Bake in the oven for 14 minutes.

Once cooked, allow the egg bites to cool in the muffin tray for a few minutes.
This will make it easier to pop them out.

Add to lunchboxes or store in the fridge or freezer (full instructions are all down below).

Description

Ingredients
- spray oil
- 5 medium eggs
- 40g chopped ham
- 25g grated cheese
Instructions
- Preheat the oven to 180c fan.
- Spray a silicone mini muffin tray with oil and add the chopped ham and grated cheese to the holes.
- Crack the eggs into a small jug and whisk with a fork.
- Pour the egg mixture in the muffin holes.
- Bake for 14 minutes.
- Allow to cool for a couple of minutes before removing from the tray.
Notes
These Mini Egg Bites will keep in an airtight container in the fridge for up to 2 days.
They can also be frozen. Defrost at room temperature in a couple of hours.
