Five Mini egg bites arranged in a child's lunchbox, along with fresh chopped veggies, fruit and sweet treats.

These mini egg bites are a great alternative to sandwiches or anything bread based in lunchboxes if your kids are not a fan.

Made with just four simple ingredients, they are brilliant to batch cook and have in the fridge or freezer.

Start by greasing a mini muffin tray like this one with some spray oil.

Add in chopped ham and grated cheese.

Ingredients for mini egg bites in a muffin tray.

Whisk the eggs in a small jug and pour into the muffin tray holes.

Bake in the oven for 14 minutes.

Egg mixture being poured using a glass jug.

Once cooked, allow the egg bites to cool in the muffin tray for a few minutes.

This will make it easier to pop them out.

Add to lunchboxes or store in the fridge or freezer (full instructions are all down below).

The lunchbox is a Pick Box Bento from my own range of children’s products.
