One Pan Christmas Morning Breakfast

Make feeding a crowd on Christmas morning super easy with my One Pan Breakfast. Minimal effort and minimal washing up!

One Pan Christmas Morning Breakfast

If you have guests staying this Christmas, the last thing you need to be doing on Christmas morning is faffing around with breakfast. You need something super easy that will fill everyone up but with minimal fuss.

My One Pan Breakfast is perfect for the job. As the name suggests everything gets cooked together in one pan, making this recipe super simple with minimal washing up!

The first step is to prep the base of the dish which is potatoes, tossed in a little oil and then sprinkled with paprika and rosemary.

Next, mix in a tin of chopped tomatoes and then add sausages on top. I am using pork sausages here but I’ve also tried it with turkey sausages which was delicious and of course very festive! And veggie sausages will work too.

That then goes into the oven for 25-30 minutes until the potatoes are just about cooked.

Next add some fresh baby spinach on top, pushing it into the spaces between the sausages.

Then crack in some eggs and cherry tomatoes aswell and bake for another 7-10 minutes.

When ready, remove from the oven and add some sliced avocado on top and it’s ready to serve straight away.

I serve this direct to the table, plonked down in the middle and it’s delicious with some crusty bread rolls for dipping. Yum!

Description

Make feeding a crowd on Christmas morning super easy with my One Pan Breakfast. Minimal effort and minimal washing up!


Ingredients

  • 400g Maris Piper Potatoes
  • 1 tbsp oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tin chopped tomatoes
  • 8 sausages (meat or veggie)
  • 100g baby spinach
  • 5 eggs
  • 150g vine cherry tomatoes
  • 1 avocado

Instructions

  1. Preheat the oven to 180c.
  2. Chop the potatoes into small bite sized pieces, leaving the skin on.
  3. Add them to a large oven proof dish along with the oil, paprika and oregano and mix well.
  4. Mix in the tinned tomatoes and then add the sausages on top.
  5. Bake in the oven for 25-30 mins until the potatoes are soft.
  6. Add the spinach and then crack in the eggs. Add the tomatoes still on the vine and return to the oven for another 7-10 mins until the eggs are cooked.
  7. Remove from the oven and add sliced avocado to the top and serve immediately.
