Pitta Pizza Bread with Hidden Veggies

A quick and easy Pitta Pizza packed with THREE hidden vegetables and ready in less than 15 minutes

Pitta pizza bread served on a round compartment plate with sliced cucumber and cherry tomatoes, along with a small heart shaped sponge cake.

Come Friday or Saturday night I usually have little energy left for big family meals.

When you’ve been making breakfasts, lunchboxes and dinners all week there’s nothing wrong with whipping up something quick and easy that you know the kids will love.

These Pitta Bread Pizza are ideal for these kind of days. So simple to make and ready in just 15 minutes.

Start off by placing the pitta breads onto a baking tray.

I used white pitta but wholemeal will work too.

You could also use naan bread instead.

Add passata to the pitta bread.

To make this recipe even easier I use this passata with basil and oregano from Aldi. It’s already got those lovely pizza flavoured herbs in there.

But if you have plain passata then just add some dried oregano and basil to it.

Next add the veggies.

I’ve used grated carrot and grated courgette. And also some diced yellow pepper.

If you have a fussy eater who will notice the green of the courgette then you can peel it first before grating. That way you only see the white of the courgette.

Lastly, add some grated cheddar cheese and chopped salami.

To get small little circles of salami like this I used a pepperami stick, cut into rounds.

Bake at 180c for 10-12 minutes until the cheese is melted.

Cut each pizza into 4 slices and it’s ready to serve.

Absolutely delicious, so quick and easy and of course a great way of getting some extra veg into your kids!

Ingredients

  • 2 pitta bread
  • 4 tbsp basil & oregano passata
  • ½ carrot, grated
  • ½ courgette, grated
  • ¼ yellow pepper, finely diced
  • 70g grated cheddar cheese
  • 1 pepperami, sliced

Instructions

  • Preheat the oven to 180c fan.
  • Add the pitta breads to a baking dish.
  • Spread the passata onto the base of the pitta.
  • Add the grated carrot and courgette and the diced peppers.
  • Add the grated cheddar and the slices of pepperami.
  • Bake for 10-12 minutes until the cheese is melted.

Notes

The Pitta Bread Pizzas are best enjoyed immediately after cooking.

      Anything you like really, maybe try ham or chicken, if you wanted to go meat free mushrooms are always good!

    Good,quick and easy meal for the kids. And you can just add the different topping according to there ‘favorites ‘ that day … as we all know kids change there minds daily, well mine do!!!
