Slow Cooker Beef Casserole

An easy recipe for Beef Casserole all cooked together in the slow cooker. Delicious and so warming, perfect for an Autumn or Winter evening.

It’s that time of year to drag out and dust off your slow cooker.

We tend to ignore our slow cookers during the warmer months but September is the perfect time to get re-acquainted for a few reasons.

Why I Love My Slow Cooker!

1. As the weather starts to cool down I begin craving proper comfort food and the slow cooker is the perfect appliance for these kind of recipes.

2. The kids are back to school and I’m back into my work routine. My slow cooker makes midweek family meals so easy. Just chuck all the ingredients in it in the morning and by late afternoon you have a delicious dinner ready to serve up.

Do You Need To Fry The Meat Before Adding It To The Slow Cooker?

For this recipe I fried the beef quickly before adding it to the slow cooker.

This isn’t essential and you can add it straight to the slow cooker if you are short on time. But it does help to intensify the rich flavour of the meat.

Slow Cooker Recommendation

I absolutely love this Slow Cooker because you can remove the inner pot and use it on the hob.

This means you can sear the meat in the dish that you slow cook it in so there’s less washing up!

Once browned, the beef and any juices are added to the slow cooker and it’s left to cook on high for 4-5 hours or low for 7-8 hours.

I like to serve it with mashed potato as it helps to soak up all that wonderful juice.

Getting kids to eat recipes like this beef casserole can sometimes be a bit of a struggle but I find that the simple addition of just a sprinkle of grated cheese on top helps them to start those first few bites.

And it really does taste delicious!

Description

An easy recipe for Beef Casserole all cooked together in the slow cooker. Delicious and so warming, perfect for an Autumn or Winter evening.


Ingredients

  • 0.5 tbsp oil
  • 500g / 17.5oz diced beef
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 3 carrots, chopped
  • 2 celery sticks, chopped
  • 200ml / 1 cup water
  • 1 red wine or beef stock pot
  • 2 tbsp gravy granules
  • 1 tbsp tomato puree
  • 1 tsp chopped fresh rosemary

Instructions

  1. Heat the oil in a large frying pan and add the beef. Cook for a few minutes until all sides have browned.
  2. Add the beef, along with any pan juices, to the slow cooker.
  3. Add the remaining ingredients and stir well.
  4. Cook on high for 4-5 hours or low for 7-8 hours.
  5. Serve with mashed potato.

Notes

This recipe is perfect to make in bulk. The leftovers can be kept in a sealed container for up to 2 days or frozen. To defrost, leave in the fridge overnight and heat until piping hot throughout.

    I made this beef casserole for my local community kitchen, I made 3 slow cookers absolutely full to the brim , it turned out beautifully tender and flavoursome. I just guessed the liquid measurements but by no means it wasn’t even double. I used tomato puree as well as Tomato paste to enhance the flavour and added some green beans. Served with mashed potato it was well received and had many compliments . Probably had 40 serves. Thank you for your recipe.

    I’ve made this for myself before and it was delicious.

    That said I have a question, how would I scale up the recipe if I were to scale it up? I’m thinking of doubling the meat (and a little bit more).

    How much should I increase everything by? I know it isn’t a simple as just doubling everything as someone else has suggested, I’ve read on other sites to do half as much more liquid and the same for herbs etc. Is this right? Also what about the stock pot, would one still be enough?

    Does the stock pot need to be made up with water first – one cup of water doesn’t seem a lot of liquid for this casserole?

      Don’t put too much water in because you will soon discover that ALL the vegetables that are cooking will produce steam and turn your lovely meal more like a watery mess. Believe me I know because I’ve added more water, and it didn’t taste as good.

    in slow cooker beef casserole it state 1 red wine or beef stock pot. Does that mean 1 CUP of red wine….?

      Hi Lorraine, no it’s the little stock pots that you can get in most supermarkets these days. They’ll be with the stock cubes. Use one of either the red wine flavour or one of the beef flavour one. x

    I have just been having a quick peruse of your site. In my house, it is the adults that are the fussy eaters, not the kids! We have 6 children who will eat anything (although my daughter was pescatarian for a while). I have gone off foods at every pregnancy, and my partner has recently found out he has a dairy intolerance. Due to a busy work schedule, my slow cooker has made it out form the back of the cupboard. This recipe looks like a win for the kids, me. my dairy-free partner and for using the slow cooker.

    This is our new favourite slow cooker meal for winter! I love all your slow cooker recipes but this one was AMAZING. The beef literally fell apart and it had so much flavour despite minimal effort putting it all together. We had it with mash and it was such a lovely comfort meal.
