Sriracha Chickpea Sandwich

This delicious Sriracha Mashed Chickpea sandwich is packed with spicy sriracha chickpeas, and salad. Perfect for a healthy lunch for busy parents!

Healthy Lunch Ideas

Eating healthily isn’t really complicated. But I do find that on busy weekdays lunch is often a bit of a disaster for me!

I often end up skipping it entirely. I’m always in such a rush to get my work finished before school pick up.

I then end up grabbing something massively unhealthy at 3pm when I am completely ravenous. Not good!

So I wanted to come up with some healthy lunch ideas that are quick and simple to put together!

Healthy Sandwich Ideas

Don’t get me wrong, there’s nothing wrong with a really simple ham or cheese sandwich. But it can be a bit boring and I find that it’s sometimes not filling enough!

And that then can lead to me snacking an hour of so later!

I often use rye bread for sandwiches like in these Healthy Sandwich Ideas, but I wanted a sandwich that was absolutely packed full of protein!

And that’s where my chickpea salad sandwich fits the bill perfectly!

Why Are Chickpeas Good?

In really simple terms, chickpeas are full of protein, fibre and healthy fats so a bit of an all rounder to be honest!

I use them in a lot of my dinner recipes. Like this 10 Minute Chickpea Curry Recipe or in these Vegetarian Chickpea Burgers.

I even use them for the kids snacks in these Chickpea Nutella Cookies (honestly, it really works!), but I’ve never really thought to use them in a sandwich.

Without any seasoning or added flavours, they can be a little bit bland.

My Sriracha Chickpea Sandwich

By adding sriracha to the chickpeas, it gives it a slight kick and transforms it into a really tasty sandwich filling!

Loaded with spicy chickpeas, lettuce, spinach, tomatoes and peppers it’s packed full of protein and other veggie goodness!

I used this delicious Sriracha Vegenaise to create a spicy sauce for the chickpeas.

However, you can of course create your own with normal mayo and Sriracha mixed together.

With the chickpeas, I mashed half and left the other half whole. This helped to give a lovely creamy texture to the sandwich but also still some bite from the whole chickpeas.

Description

This delicious Sriracha Mashed Chickpea sandwich is packed with spicy sriracha chickpeas, and salad. Perfect for a healthy lunch for busy parents!


Ingredients

  • 100g / ¾ cup cooked canned chickpeas, drained and rinsed
  • 1 ½ tbsp Sriracha mayo
  • 4 cherry tomatoes
  • ¼ bell pepper
  • small amount of red onion
  • handful of lettuce
  • handful of fresh baby spinach
  • salt and pepper to taste
  • 2 slices seeded wholemeal bread

Instructions

  1. Add the chickpeas to a bowl and roughly mash them (I tend to mash half the chickpeas and leave the other half whole). Add the Sriracha mayo and mix well.
  2. Chop the tomatoes, pepper and red onion as small or big as you like and mix in with the chickpeas. Season with salt and pepper.
  3. Make your sandwich by adding the lettuce, then the chickpea mixture and finally the spinach onto the slices of bread.
  4. Cut and serve immediately.
