Tropical Kale Smoothie

Breakfast Smoothies

Now that the weather is finally starting to warm up, it’s time to break out the breakfast smoothies again!

I have to admit that when it comes to breakfast for myself I’m so inconsistent.

Some days I will eat breakfast with the kids, other days I wait until they have gone to school and nursery and other days (more than I care to count!) I don’t eat anything at all and then end up starving at 11am.

Smoothie Recipes

I am a big fan of smoothies for both kids and adults as they are a great way of getting fruit, veggies, nuts and seeds into your diet! Especially if there are veggies that your kids might not normally eat!

I have quite a few smoothie recipes for kids on my page like this Sunshine Orange Smoothie which is great for injecting some Vitamin C into their day!

Green Smoothie

But I really wanted to come up with a quick and easy green smoothie that was more for me than the kids!

Last summer I got into a good habit of having a smoothie 3 or 4 mornings a week and I’m trying to get myself back into that routine again this year.

This Tropical Kale Smoothie was one of my favourites and I’d thought I’d share it here too for any other mamas that struggle to eat a decent breakfast in the morning.

This recipe is aimed more at mums (and dads!) than kids.

My two are very suspicious of anything green but if you can get your kids to drink it then that’s fantastic!

Dairy Free Smoothie

This smoothie is dairy free.

I use a combination of coconut milk and coconut water which makes it really light and refreshing and super hydrating first thing in the morning.

I’ve also used half a frozen banana in the recipe but if you really hate bananas feel free to leave it out and add a few extra chunks of the other fruit instead.

Easy Smoothies!

The fruit is bags of pre-chopped and frozen tropical or exotic fruit which you can buy in most supermarkets.

It makes it much easier than prepping fresh fruit and works out cheaper too and with no waste.

I like to mix up bags of pineapple, mango, melon and papaya but you can choose whatever you prefer.

It’s best to drink the smoothie straight away but you can pop it into a jar and take it with you to work or on the school run. Just give it a good shake before drinking!

Description

Ingredients

  • 2 cups fresh kale
  • 1 cup frozen exotic tropical fruit (mango, pineapple, melon, etc)
  • ½ frozen banana
  • 1 cup coconut milk
  • 1 cup coconut water

Instructions

  1. Add all the ingredients to a blender and blitz until smooth.
  2. Drink immediately.
