Tuna Sweetcorn Bites

These Tuna & Sweetcorn Bites are a great way to introduce fish to fussy eaters. Small bites of mashed potato, tuna and sweetcorn in a crispy coating.

If you struggle to get your children to eat fish then you need to try these Tuna Sweetcorn Bites. Made with mashed potato, tinned tuna and sweetcorn, they are coated in panko breadcrumbs and lightly fried to give them a crunchy kid-friendly coating.

For this recipe I recommend using cold mashed potato as it holds together better. You can use leftover homemade mashed potato or shop bought mashed potato like this one. Don’t warm it in the microwave first, use it cold.

To make, add the cold mashed potato, tuna, sweetcorn and spring onion to a large bowl, along with half of the panko breadcrumbs. I also use an egg to help bind the mixture together but recommend cracking it into a cup, whisking and just using half to start with.

This is the consistency of the mixture that you are aiming for. It’s wet enough so that the ingredients are all nicely binding together but not overly wet so that the bites will fall apart when fried.

It’s then time to form them into balls. I use a tablespoon of the mixture at a time to form into a ball then roll in the remaining panko breadcrumbs.

You should be able to make 16 bites from this mixture. But you can of course double the ingredients like I have here if you’re feeding a crowd!

Fry the bites in a little oil for about 7 minutes, turning them every couple of minutes so that they are evenly cooked and browned on all sides.

You will need to do this in batches so that the pan doesn’t get over crowded.

They’re then ready to serve up! Serve them for lunch or dinner with some crudites or cooked veggies or even on their own as an afternoon snack.

Ingredients

  • 200g cold mashed potato
  • 240g tinned tuna
  • 40g tinned sweetcorn
  • 40g panko breadcrumbs
  • 1 spring onion, chopped
  • 1 medium egg
  • salt and pepper to taste
  • 1 tbsp oil

Instructions

  1. Add the mashed potato, tuna, sweetcorn, spring onion and half the panko breadcrumbs to a large bowl.
  2. Crack the egg into a mug or bowl and whisk with a fork.
  3. To start with add half the egg to the other ingredients and mix well.
  4. If needed to bind the ingredients together, add a little more egg.
  5. Season well with salt and pepper.
  6. Add the remaining panko breadcrumbs to a large plate or tray.
  7. Take one tablespoon of the tuna mixture at a time and form into a round ball, then roll in the breadcrumbs.
  8. Repeat with the remaining mixture. You should be able to make 16 tuna bites.
  9. Heat the oil in a frying pan and fry the tuna bites for about 7 minutes, turning every couple of minutes. You may have to do this in batches.
  10. Serve immediately.

Notes

This recipe is best eaten immediately although the bites will keep in the fridge for up to 2 days.

They can also be frozen and defrosted in the fridge overnight. To reheat, fry in a little oil for a minute or two on each side.

    I found these really easy to make and the kids enjoyed them too, used left over mash from the night before, so a cheap meal as well.
