Waffle Omelette

Waffle makers are so versatile and you can cook so many recipes in them other than traditional waffles. Try this Waffle Omelette for a simple but tasty lunch for the kids!

My daughter loves waffles and has been bugging me for ages to get a waffle maker.

I was reluctant as the thought of yet another gadget taking up space in the kitchen just wasn’t appealing to me.

But as always I gave in! However I promised myself I’d find lots of ways to use it to make the purchase worthwhile!

One of my favourite recipes I’ve made so far in it are these Waffle Omelettes.

Just take your usual omelette ingredients but rather than cooking in a pan, cook them in the waffle iron.

They make a really quick and easy lunch and the fun waffle shape makes them a bit more appealing for kids too!

The first step is to add some eggs and any other omelette ingredients to a jug and mix well.

I used cherry tomatoes, peppers, ham and grated cheese but feel free to customise to your own tastes.

All of the ingredients in a clear glass Pyrex measuring jug.

How to Make Waffle Omelettes

Preheat the waffle maker and when it’s hot add some spray oil to the top and bottom.

Pour the omelette mixture in, dividing between the four compartments.

Cook for 4-5 minutes until the omelette is golden brown.

You know it’s cooked when it starts to come away from the edges, although you may need to give it a little nudge if it gets stuck in places.

Waffle now cooked and ready to be served.

Serve up straight away with some chopped veggies for a simple but really tasty lunch.

And something a little bit different for the kids that they hopefully will enjoy!

Which Waffle Iron Should I Use?

I used a waffle iron from Aldi but this waffle iron on Amazon looks exactly the same.

I’ve used a round rotating waffle iron but the recipe will also work in square waffle irons.

Ingredients

  • 2 medium eggs
  • 40g cherry tomatoes
  • 15g yellow pepper
  • 15g ham
  • 25g grated cheddar cheese
  • salt and pepper
  • spray oil

Instructions

  1. Crack the eggs and add them to a jug.
  2. Chop the cherry tomatoes, pepper and ham into small pieces and add to the eggs along with the grated cheese.
  3. Mix well with a fork and season to taste with a little salt and pepper.
  4. Preheat the waffle iron. When it’s ready spray some oil on the top and bottom of the iron.
  5. Add the omelette mixture and close.
  6. Cook for 4-5 minutes until golden brown.
  7. Serve with chopped veggies for a quick and easy lunch.

Notes

This recipe will serve 2 if serving to young children or 1 if serving to an older child or adult.

The omelette is best eaten immediately after cooking although it will keep in the fridge for 24 hours and can be reheated.
